Rainbow trout’s scientific name is Oncorhynchus mykiss. Rainbow trout flesh can be white, pink, or orange and has a delicate almost nutty flavour. The colour of the flesh is most often related to the diet of the fish.
Rainbow Trout belongs to the Salmo fish family and is closely related to Atlantic Salmon and Arctic Char. All of these fish are rich in omega-3 fatty acids.
