Smoky shrimp tacos with lime yogurt slaw

Ingredients
  

Seasoned shrimp
  • 1 lb Coldwater Shrimp (frozen, cooked)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp brown sugar
  • 1 tsp cayenne pepper (optional)
  • 1 tsp black pepper
  • 1 tsp salt
Slaw
  • 2 cup cabbage slaw mix
  • 1 cup plain Greek yogurt
  • ½ lime (juiced)
Garnishes
  • 1 cup chopped tomato
  • 1 cup sliced jalapeños
  • ½ Lime (wedges)
To serve
  • 8 corn tortillas

  • 1 frying pan
  • 2 mixing bowls

Method
 

Season and heat the shrimp
  1. In a small bowl, combine paprika, cumin, brown sugar, cayenne, salt, and pepper to create the taco seasoning. Toss the shrimp with olive oil and the seasoning blend until evenly coated.
  2. Heat a pan over medium heat and warm the shrimp until heated through and lightly crisp on the outside. The shrimp are already cooked, so avoid overcooking. Remove from heat and set aside.

Lime-yogurt slaw
  1. In a bowl, combine the Greek yogurt, cumin, and juice from half a fresh lime. Mix until smooth. Toss the cabbage slaw with the yogurt mixture until evenly coated.
Prepare garnishes
  1. Chop the tomatoes and slice the jalapeños. Prepare any additional vegetables or herbs you would like to use.
Assembly
  1. Warm the corn tortillas in a dry pan over medium heat until slightly browned and pliable.
  2. Fill each tortilla with seasoned shrimp, slaw, and your choice of garnishes. Serve with fresh lime wedges.
