Roasted Arctic Char with Gourd-geous Seasonal Vegetables

This roasted Arctic Char recipe with seasonal, local brussels sprouts and acorn squash is just what you need for the fall season! The honey-Dijon glaze adds a nice depth of flavor to the mild and delicious fish. The fish and vegetables go in the oven on the same pan, so you’ll have a perfect, cozy meal ready in no time. Let’s get started:

For the glaze:

Steps

  1. Preheat your oven to 400 F
  2. Prepare your Char by wiping it down nose to tail and scoring the skin with a knife to the bones on both sides
  3. Place on baking tray with oiled tinfoil
  4. Cut and prepare your vegetables by tossing them in your oil of choice with salt and pepper. Surround the fish with vegetables on the baking tray
  5. In a bowl, whisk together the honey and Dijon mustard with a pinch of salt and pepper. Reserve half of the glaze and brush the other half on the Char
  6. Add some fresh sage leaves around the tray
  7. Roast in oven for 20 minutes
  8. Let sit for 2 minutes then transfer to a tray. Drizzle with remaining sauce and garnish with toasted pumpkin seeds. Pair with your favorite beverage and enjoy!
