Starting with high-quality, sustainably raised Salmon from Nova Scotia’s state-of-the-art Recirculating Aquaculture (RAS) facilities, our hot smoked salmon is wet brined in our signature sweet and salty brine and then hot smoked to perfection with natural maple and birch wood chips sourced from the same sustainably managed woodlot long favoured by local fish smoking legends.
