Easy Roasted Asparagus with Garlic

Ingredients
  

  • 1 lb Asparagus spears (thick preferred)
  • 2 cloves Garlic minced
  • 1 tbsp Olive oil
  • ΒΌ tsp Kosher salt
  • Freshly ground black pepper (to taste)

Equipment

  • 1 Rimmed baking sheet
  • 1 Large mixing bowl
  • Tongs or spatula

Method
 

  1. Preheat oven to 425 degrees Fahrenheit and place a rimmed baking sheet inside to heat.
  2. Toss the asparagus with the olive oil, minced garlic, salt, and pepper.
  3. Carefully remove the hot baking sheet and spread the asparagus in a single layer.
  4. Roast for 12 to 15 minutes until the undersides are browned and the tops are vibrant green.
  5. Serve immediately.

Notes

This roasted asparagus with garlic pairs beautifully with our wet brined salmon or dry brined salmon. The garlic flavour complements the fish without overpowering it.
Level-up ideas: You can easily elevate this dish with a finishing flourish just before serving.
  • A generous sprinkle of freshly grated Parmesan cheese (added in the last two minutes of roasting so it melts and crisps) brings a savoury, nutty depth.
  • For a more adventurous twist, scatter a teaspoon or two of dukkah (a toasted nut and spice blend) over the hot spears right after they come out of the oven for crunch and warm spices.
