Double-up the ingredients for an easy meal for four.
- Serves 2
- Prep Time 15
Ingredients
- 16 oz Sustainable Blue Atlantic Salmon (2x8oz)
- 1 tsp Paprika
- 1 tsp Chili flakes
- 1 tsp Salt
- 1 tsp Pepper
- 1 tbsp Olive Oil
- 1 cup Cooked rice or grain of choice
- 2 tbsp Soy Sauce
- 2 cups Veggies of your choice (we recommend avocado, cucumber, carrot)
- 1 cup Mayonnaise
- 1 tbsp Sriracha
- 1 tbsp Honey
Directions
- Dry off salmon fillets with a paper towel and slice in 1” chunks. In a bowl, toss salmon in olive oil and spices (paprika, chili flakes, salt, and pepper).
- Add salmon chunks to the air fryer at 350ºF and cook for 3 minutes. Flip salmon chunks and cook for another 3 minutes or until desired crispiness. If you do not have an air fryer, I suggest pan-frying over medium heat until cooked through.
- Mix together the mayo, sriracha, and honey in a small bowl.
- In a separate bowl, mix soy sauce with cooked rice. Divide between two bowls and top with your favourite chopped veggies, and drizzle with spicy mayo.
- Optionally, you can jazz up your dish by adding salmon roe (cured), shredded dried seaweed, and sesame seeds. Enjoy!
