NEW recipe: Grilled Halibut Steaks with Salsa Verde
Spice up your summer dinners with our halibut steaks! These lean, mild and sweet tasting fish are caught off the coast of Codroy, Newfoundland and are perfect for a grill night. They’re thicker and firmer than other white fish, and taste absolutely amazing with salsa verde.
We know you’re busy — and that’s why this recipe is so great! It only takes around 10-15 minutes once the grill is heated!

Ingredients:
- Halibut steaks
- Olive oil
- Pepper
- 1 lemon sliced into round slices for grilling
- 2 tbsp capers
- 1 cup chopped flat leaf parsley
- 1 clove garlic, minced
- 2 tbsp white wine vinegar or lemon juice
- 3-4 tbsp olive oil, more as needed
- 1-2 anchovies, minced
Instructions:
- Prepare your grill. The halibut is lean and will cook quickly, so ensure it is preheated as hot as possible. For best results, use charcoal. Pan frying in cast iron is another good option to get a great sear.
- While the grill heats up, make the salsa verde: combine the chopped parsley, capers, white wine vinegar, garlic, anchovies, and olive oil in a bowl. Add salt and pepper to taste and add more vinegar/oil as needed. Set aside while you cook the halibut.
- Prepare the halibut by patting the surface dry with paper towel.
- Add salt and pepper and rub the halibut with cooking oil.
- Carefully place the halibut steaks on the grill (directly above coals if using charcoal) and sear for 2-3 minutes. Don’t move the halibut for the first few minutes to ensure you get grill marks.
- Carefully flip the halibut over and grill for another 2-3 minutes.
- While the halibut cooks, place a few slices of lemon on the grill.
- If using a thermometer, check the halibut and remove when it reaches the 125-135 degree Fahrenheit range.
- Remove the halibut from the grill and place it on a serving plate.
- Place the grilled lemons on top, and spoon the salsa verde onto the steaks.
