Roasted Arctic Char with Gourd-geous Seasonal Vegetables
This roasted Arctic Char recipe with seasonal, local brussels sprouts and acorn squash is just what you need for the fall season! The honey-Dijon glaze adds a nice depth of flavor to the mild and delicious fish. The fish and vegetables go in the oven on the same pan, so you’ll have a perfect, cozy meal ready in no time. Let’s get started:
Ingredients
- 1 whole Arctic Char
- 10 brussels sprouts
- 1/2 acorn squash
- 1 whole red onion (medium sized)
- 1 bunch fresh sage
- 1/4 Cup toasted pumpkin seeds
For the glaze:
- 3 tbsp Dijon Mustard
- 3 tbsp honey
- 1/2 tsp salt
- 1/4 tsp ground black pepper
Steps
- Preheat your oven to 400 F
- Prepare your Char by wiping it down nose to tail and scoring the skin with a knife to the bones on both sides
- Place on baking tray with oiled tinfoil
- Cut and prepare your vegetables by tossing them in your oil of choice with salt and pepper. Surround the fish with vegetables on the baking tray
- In a bowl, whisk together the honey and Dijon mustard with a pinch of salt and pepper. Reserve half of the glaze and brush the other half on the Char
- Add some fresh sage leaves around the tray
- Roast in oven for 20 minutes
- Let sit for 2 minutes then transfer to a tray. Drizzle with remaining sauce and garnish with toasted pumpkin seeds. Pair with your favorite beverage and enjoy!
