Our 6 oz Candied Atlantic Salmon starts with sustainably raised salmon from Sustainable Blue’s cutting-edge Recirculating Aquaculture (RAS) facilities in Centre Burlington, Nova Scotia. This maple-infused salmon is dry brined in a sugar-based cure, then double smoked with natural maple and birch wood chips from a sustainably managed local woodlot, long cherished by regional fish-smoking legends. This double-smoking process imparts the smokiest flavor of all our products. After smoking, the salmon is left to soak overnight in pure maple syrup, giving it that irresistibly sticky-sweet finish.
