Starting with high-quality, sustainably raised Salmon from Nova Scotia’s state-of-the-art Recirculating Aquaculture (RAS) facilities, our Nova Lox is dry salted in naturally harvested sea salt and cold smoked with natural maple and birch wood chips sourced from the same sustainably managed woodlot long favoured by local fish smoking legends. The name originates in New York and is a remnant of the days when wild Atlantic Salmon was salted and shipped to smokehouses all over the Northeastern US from Nova Scotia. We are proud to honor this tradition as the only smokehouse working exclusively with Nova Scotia-raised fish. We’re committed to bringing back this historical tradition with the only True Nova Lox currently available on the marketplace.
