Dry brine vs wet brine fish: same chemistry, one difference

Almost every guide treats these as two opposite techniques with opposite results. They are not. The salt chemistry is identical, and only one variable actually changes between them.

Every guide to dry brine vs wet brine fish sets them up as opposites. One firms the flesh and concentrates flavour, the other softens it and adds moisture. Pick according to what you want.

That framing is wrong, and it is wrong in a way that leads people to the worse choice.

Salt does the same thing to fish muscle in both methods. Identical chemistry, identical direction, identical effect on how the fish holds water. The only real difference between them is whether you also introduce a quantity of water from outside the fish. Once you see it that way, the decision gets much easier, because the rest of cooking fish well is largely a fight against water.

What salt actually does, and it is not what you would guess

Here is the part almost every food blog gets backwards, including the previous version of this article.

The intuitive story is that salt draws water out and packs the proteins closer together, giving you a denser, firmer piece of fish. Half of that is right. Salt does draw water to the surface at first. But what happens next is the opposite of packing.

The lattice opens, it does not close

Fish muscle is a lattice of protein filaments with water held in the spaces between them. When salt enters that lattice, chloride ions attach to the filaments and give them all the same electrical charge. Like charges push each other apart. So the lattice expands rather than contracting, and the newly opened spaces hold more water than before.

What the numbers say

The food science literature calls this salting in, and the numbers are specific. A study on dry salted cod fillets sets out the thresholds: once salt in the muscle rises slightly above its natural ionic strength, the spaces between filaments get larger through electrostatic shielding, and above roughly 0.5 molar the thick filaments start to depolymerise, driving significant swelling that peaks between 0.8 and 1 molar. Only past about 1 molar do the proteins aggregate irreversibly and the lattice finally contract, which is the territory of salt cod rather than dinner.

Work on brined fish muscle states the consequence plainly: chloride-driven swelling of the myofibrils increases the water-holding space while shrinking the space outside the cells, and the water-holding capacity goes up.

So the reason brined fish cooks juicier is not that it holds less water. It is that it holds more, and holds it harder. Salt makes fish better at keeping the water it already has.

That is true of both methods. It is the whole benefit, and it is the part they share.

So where does wet brining actually differ

If the chemistry is the same, the difference has to be somewhere else, and it is. It is the water you brought with you.

In a dry brine the salt has nothing to work with but the fish’s own moisture. It pulls a little to the surface, dissolves in it, and travels back in. Net water into the fish: none. You get the lattice expansion and the improved water-holding, and you finish with a surface that is drier than when you started.

In a wet brine the fish sits in a solution, so salt and water move in together. Research comparing dry salting against brine on salmon describes brine immersion as causing the muscle cells to swell and accumulate the brine itself. You get the same lattice expansion, and then you fill the expanded spaces with water from the bucket.

That is the entire difference. Not firmer versus softer, not concentrated versus diluted, though those follow from it. One method improves how the fish holds its own water. The other does that and then adds water on top.

Why I would dry brine almost every time

Because everything else on this site is an argument against water at the surface of a fish, and wet brining puts it there deliberately.

A wet surface cannot exceed the boiling point of water, so it steams instead of browning, which is the whole problem with not drying fish. Water flooding a pan drops its temperature and prevents the crust that lets a fillet release cleanly, which is a large part of why fish sticks to the pan. And skin will not crisp while it is wet, which is step one of crispy fish skin.

Wet brining hands you the benefit and the problem in the same bucket. You can undo the problem, by patting the fillet very dry and resting it uncovered in the fridge, but then you have spent an hour arriving where a dry brine starts. The dry brine gets you the chemistry without the cleanup.

There is a second reason, and it is about what you are paying for. Wet brined fish weighs more coming out of the brine than going in, because it absorbed water. That water leaves again in the pan. If you like the result, fine. Just be clear that some of what you gained is not fish.

For a fillet you intend to sear, roast, grill or crisp the skin on, dry brine. That covers most of what anyone cooks at home. Crispy dry brined salmon is the method with quantities attached.

When wet brining earns its place

It does earn it, in three situations, and pretending otherwise would be dishonest.

Thick lean cuts you are worried about overcooking. A thick halibut or cod steak with no fat to protect it has a narrow window. Starting with more water in the flesh widens it. You are trading crust for margin, and sometimes that is the right trade.

Anything going into a smoker or a low oven. Long, gentle cooking dries fish out, there is no sear to protect, and the extra water is straight benefit. This is why traditional smoking recipes brine.

When you have no time to rest the fish. A short wet brine works faster than a dry one because the salt arrives already dissolved.

If you go that way, crispy wet brined salmon shows the drying step that makes it work anyway.

How long, and the line you should not cross

Fish is thin and it is not meat. The times are much shorter than anything you have read about a turkey.

  • Dry brine: 15 to 30 minutes for most fillets, up to an hour for something thick
  • Wet brine: 15 to 30 minutes, and 45 at the outside

Past that you are not seasoning any more, you are curing. The texture goes firm and translucent, the flavour turns, and you have made gravlax by accident. That is a legitimate thing to make on purpose and a disappointing thing to find at dinner.

Thin fillets sit at the short end of both ranges. A haddock fillet does not need half an hour.

Do you salt it again afterwards

Mostly no.

Both methods have already put salt into the fish, and it is distributed through the flesh rather than sitting on top, so a second seasoning by eye tends to overshoot. Reach for the things salt is not doing instead: pepper, lemon, herbs, butter at the end of the pan. If you want more salt, add it at the table where you can taste as you go.

The exception is flaky finishing salt on a seared fillet, which is texture rather than seasoning and lands on the crust rather than in the fish.

Dry brine vs wet brine fish is the same technique with one variable. Salt expands the protein lattice and improves how fish holds water, in both cases. Wet brining then adds water you will spend the rest of the cook removing. Unless you are smoking it or you are genuinely worried about overcooking a thick cut, dry brine and get on with it.
